Molasses Friendship Cookies with Lemon Glaze
- 1 teaspoon ground cloves
- 1 teaspoon ginger
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 cup sugar
- 1 egg
- ¾ cup shortening
- ¼ cup molasses
- ¼ teaspoon salt
- 2 cups all flour LEMON GLAZE FOR DRIZZLING
- 1 cup powdered sugar
- 1 tablespoon lemon juice
- 1 tablespoon water
- Preheat oven to 350°
- Cream together all ingredients EXCEPT flour, mixing on low speed for 1 minute, scraping down the sides once.
- Add flour and mix an additional 2 minutes, again scraping down the sides of the bowl.
- Roll the dough into walnut size balls ( or smaller) and dip them in sugar to coat.
- Bake on parchment or a lightly greased cookie sheet for approximately 10 minutes. You want them to be soft, so do not over bake.
- Remove from the oven and cool on a wire rack.
- When the cookies have cooled, line them all up close together and drizzle lightly with lemon glaze.LEMON GLAZE
- Combine powdered sugar, lemon juice and water and stir until smooth.
